Shady Oak Smash Bash II

Steve Doty and Jason Lindell from Shady Oak Brewing join Herlinda Heras and Daedalus Howell on Brew Ha Ha. They have been on the show before, the last time was when Jason was on this episode last year before the same event.

Shady Oak has two events this weekend. The Smash Burger Battle, also known as the Smash Bash II, is this Saturday. Then they are holding another edition of their record sale, on Sunday. The doors open at noon on Saturday for the Smash Burger Battle. They will have people’s choice and also judging. The live band “The Love Handles” will perform. Admission is free, all ages, pet friendly. You can call it a battle, or just a fest, depending on your appetite for competition.

Spontaneous Beer

Steve and Jason have brought three beers, all of them in un-labled growlers. One of the beers is called Hella Citra, a west coast IPA with Citra hops. Hella is just the west coast and rocky mountain slang term, not the beer style. It just has a lot of Citra hops. In the ‘80s they might have called it “Rilly Citra” but they didn’t have good beer back then yet. One of their beers is a "spontaneous beer" which is one that is 100% fermented by yeast that is in the environment, none added. It takes a dedicated and skillful brew master to pull this off.

28 States Brewing was founded 11 months ago in San Francisco, named after the 28 states of India. Nitesh comes from home brewing and opening a brewery is a big step. They are making beer with Indian spices and even toasted basmati rice. The name is Desi Gaijin. Daedalus finds that it is subtle and balanced.

Next they taste a Hefeweizen, made on an open fermenter. Nitesh explains that San Francisco has natural bacteria in the air that makes San Francisco sourdough bread special. He fermented this beer using open fermentation so he captures the same local microbes. There is a funk and a savory finish that comes from the bacteria. He will be experimenting with open and closed fermentation. It is called Haryana Weizen. Haryana is Nitesh’s native state. Weizen beer has to be 60% wheat and this is 61%.

From the bar to the sales call

Jason and Herlinda discover that they both were bartenders before ever working in sales. It’s a great training ground, for learning how to talk to all kinds of people. Jason met Nitesh by simply talking about beer.

Nitesh was home brewing while working in tech. During Covid, when everyone was working at home, he started home brewing with advice from his mentor, Lester Koga of Barebottle Brewing. He started 28 States before he met Jason. Now there are so many flavors in is beer it’s amazing. He describes one called Mango Elaichi Sour flavored with Indian mangoes and cardamom.

Herlinda will host a beer cruise from Basel, Switzerland down the Rhein past Strasbourg, France ending in Amsterdam. It will be in November 2027, because these trips are always planned well in advance. There will be local beer tastings all along the way. Lagunitas Lagufest and more

Larry Figueroa and Tyler Morgan join Herlinda Heras and Daedalus Howell on this special Tuesday edition of Brew Ha Ha, to talk about Lagunitas Lagufest, this Saturday September 19 at Lagunitas Brewing Company.


ProChiller Green will be performing a Proof of Concept test at Hanabi Lager on September 23, 2026, to demonstrate the ProGreen Chiller in a brewery. Visit ProChiller online for more info.


Larry and Tyler are Guest Experience Specialists and they have come wearing  lederhosen, which are Bavarian leather shorts with suspenders. This is to begin celebrating Oktoberfest, which starts on Saturday September 19. The dates of Oktoberfest are actually tied to the harvest, not just to the calendar. In German it is Weisen, which is the harvest. So it actually begins in September.

Lagunitas Lagufest

Lagufest is Lagunitas Brewing’s version of Oktoberfest. Larry and Tyler have brought the two Lagunitas Lagufest beers. One is “a weak lager” Herlinda says is crisp and light. They also have a Radler which is a mix of lager beer and lemonade. The event will have a band called Polkaliscious, which will play polka versions of popular songs. There is also a stein-holding competition. Lagunitas serves pretzels year-round, and German sausage too.

Lagunitas made a classroom at the brewery available for the Craft Beer Appreciation class that Herlinda organized for Sonoma State University. Herlinda remembers some of her students were people interested in starting a craft brewery. There was also one student to enrolled so that she could talk to her son about the beers that he liked. Herlinda’s class taught her about flavors and terminology for that. The roster of guest speakers for that class included important brewers like Mark Carpenter, formerly of Anchor Brewing, and Pete Schlossberg, as well as Ron Lindenbusch who came to describe Lagunitas’ marketing, which is like no other.

Daedalus notes that their mandate is to have something cool going on all the time. That means that Tyler and Larry have great jobs, and busy ones. Jeremy Marshall The Brew Monster, from Lagunitas, was also on the show recently, on this episode.

A good Oktoberfest beer has to pair well with food. Beer pairs so well with food, better than wine, for some people.

Randy Mosher, Author of "Tasting Beer" and more

Randy Mosher, the renowned author of Tasting Beer, joins Herlinda Heras and Daedalus Howell on Brew Ha Ha today. This is his first time on the show but not the first time that Herlinda has mentioned his books.

Randy Mosher is one of the most well-known authors in the beer world. His book was on the reading list in the craft beer program that Herlinda taught at Sonoma State. The book Tasting Beer is in its second edition. It has been translated into 10 languages including Ukrainian. Herlinda’s friend Lana Svitankova actually did the translation. Lana was a guest on Brew Ha Ha on this episode on April 25, 2024.
 
His new book is Your Tasting Brain: a sensory approach to wine, beer and other pleasures. He spent six years working on this book. He was always interested in tasting and understanding it. Randy’s reason for putting “Brain” and “Tasting” both in the title is so that the book would attract readers interested in psychology and also others interested in tastes and flavors. It would be stocked in two different sections of a book store.

We can taste what our dogs can't.
Through all of his research, he learned that people have a special ability to zero in on food. Most other mammals can’t smell a lot of the flavors of cooked food that we do. And we all have the same physiological sensitivity and on top of that we can learn to recognize and identify flavors. Herlinda knows this process because as she was training to get certified as a beer judge, she had to learn the names to identify all the flavors she could taste.

A lot of our perception of foods focusses on flaws, because we have to be on guard against spoiled food. That is especially true when it comes to beer, where there are a lot of ways that it can go off. Because we all have the same brains and nervous systems, anyone can learn to recognize flavors. Randy suggests starting by smelling what is around you. Smell the roses, and it’s no cliché. Literally smell them and all the others. You start by trusting your taste.

Jeffrey House, The Cider King

Jeffrey House, The Cider King, is back with us today on Brew Ha Ha with Herlinda Heras and Daedalus Howell. He has been on Brew Ha Ha before, the last time was this episode on December 5, 2024.


Pro Chiller Green will be at Hanabi Lager on September 23 for another on-site demo of their climate-friendly chiller. Chillers work not only for production of beer but also chocolate, dairies and in cider too. Check the ProChiller website for details.


Jeffrey House has done a lot in his career to bring English beers to the US and to make great cider in America and taking it back to the UK. He calls himself a transatlantic missionary. Jeffrey founded Ace Cider, probably the largest craft cidery in America.
 
He was also the one who brought British beer to America, when he brought Fuller’s London Pride in 1980s. They brought Fuller’s ESB which was a hit among all the micro-brewers. It motivated a lot of them. ESB extra-special bitter.

The First California Craft Beers in Britain

Jeffrey introduced Fritz Maytag to the Fuller’s people in England. He was the first to put Anchor beer on tap in Britain. Jeffrey is researching the transatlantic beer bridge because it is a history that demands to be written.

Kegs are expensive. When they finished with the Fuller’s kegs in California, they sold the empty kegs to Anchor which filled them and shipped them to the east coast and to London. Jeffrey started California Cider Company in 1993. He has told his story before on this show on this episode and also here.

His book, The Cider King, has a cautionary tale about brand ownership. It is the first craft cider company in the western states after Prohibition. They started in Marin and then worked in Graton. The only other one at the time was back east, Wood Chuck. There were some English ones too, including Blackthorn. That became the biggest cider brand in the western states, during the boom of Irish and English pubs in the 1980s and ‘90s. Herlinda and Jeffrey agree that “there’s nothing like the ambience of a good pub or taproom.”

Iron Ox Brewing Co.

Vince Ferracuti, CEO, and Matt and Alex, brewers for Iron Ox Brewing Co. join Herlinda Heras on Brew Ha Ha. This is their first time on the show.

Herlinda is just back from Tahoe Brew Fest, which is an emerging beer festival that benefits the Boys and Girls Club. Ski Run Blvd. runs down the mountain and straight through town. It was lined with brewers. They also staged an event called the Brewers Olympics, where the competitors did hilarious feats of strength and endurance, with beer stuff. They had both a men’s and women’s division and Herlinda’s friend from Crooked Goat won the men’s event.

Iron Ox Brewing Co. is located on Industrial just off of Piner Rd., across the street from Bottle Barn. They have a taproom and a beer garden, and food trucks that come by. In addition to Iron Ox, Matt has been running Three Disciples for the last five years. Some folks from Three Disciples were on Brew Ha Ha on this episode back on Dec. 1, 2022.

First they taste the 707 Sonoma County Ale, an easy-drinking light-bodied but big hoppy flavored beer. It is only 5% AVB.  Matt says if you want a successful taproom you have to create an inviting environment and you have to make good beer. Alex started brewing for Bear Republic and has also worked in wine production.

The Growing N/A Category

Iron Ox Brewing also makes a non-alcoholic beer. Herlinda recently helped the Petaluma Music Festival organize a tasting booth for N/A drinks. As a beer judge for festivals and conventions, Herlinda has noticed how this category is growing. When she first started judging 14 years ago, nobody wanted to judge in the category but now judges are more interested in it as the category has grown.

There is big news with N/A brewing. Iron Ox has recently acquired a reverse-osmosis system. They prefer this method because it is more delicate way to take the alcohol out. This method is more popular in Europe.

Iron Ox Brewing Co. has a family-friendly beer garden that is is built for fun. They have held rubber ducky races and Hot Wheels races. They have corn hole every Tuesday and open mic on Thursday nights. The schedule of food trucks is on their website. They are open Mon-Thurs 4-10, Fri 3-10, Sat 2-9 and Sun 1-7 (all times PM).

Barry Bicker, President of Moonlight Brewing Co.

(8/27, pt. 2 of 2) Barry Bicker, Moonlight Brewing co-owner and President, joins Herlinda Heras and her other guests on Brew Ha Ha. Also in the studio for today’s show are Ron Silberstein and Kim Sturdevant from Admiral Maltings. This is part two of their conversation. Part one is right here.

On September 19, Admiral Maltings is putting on a promotion called “It’s the Malt!” Moonlight Brewing will be one of the breweries at the party on September 19.

Moonlight Brewing Co. will be holding their 34th anniversary party, on Saturday, August 29. Brian Hunt founded Moonlight Brewing in 1992. They are releasing a new beer called Deep Cut Lager, with Deep Cut Cascade hops from Yakima Valley. They have DJs and live bands. It is family friendly and dog friendly.

Herlinda first met Barry Bicker when he was at Lagunitas. She remembers bringing Moonlight and Lagunitas to a beer festival in Lithuania. The Moonlight beer never got out of customs, but the Lagunitas got through and it was a hit. They were so excited to get Lagunitas which they had only heard of at that time. Sweden was Lagunitas’ first export market. Herlinda met Ron when he was doing Thirsty Bear Beer in San Francisco. Unfortunately, the pandemic got it. 

Change Is the Only Constant

Herlinda has seen so many changes in the craft brewing business since she started doing this show over a decade ago. Firestone-Walker has taken over the brewing for Stong. She has seen Kim’s career progress too through several different breweries. Herlinda noticed a comment on Sayre Pietroski’s blog saying that things are going local. The guests agree.

As the great imaginary pendulum of changing tastes swings slowly back and forth, lagers and subtle flavors are more popular again.

Herlinda notices how the careers of her three guests have progressed. Barry sees more consolidation happening, but not for Moonlight. They believe that local is important and there is more quality and good, fresh products. There is great beer being brewed in a lot of places now. But now that people are used to having craft beer, the bar is set higher for quality. Also, the personal touch of local people is priceless.

They taste a Moonlight beer called Working for Tips, which is flavored with the tips of redwood trees. Ron says it is the best non-hopped beer he has ever tasted. Brews have been flavored with spruce and juniper branches in Nordic countries.

Admiral Maltings - It’s the Malt!

(8/27, pt. 1 of 2) Ron Silberstein and Kim Sturdevant join Herlinda on Brew Ha Ha today to talk about Admiral Maltings It’s the Malt! coming September 19. Admiral Maltings was also on this episode of Brew Ha Ha on June 20, 2024, and again last year on May 1, 2025. Kim Sturdevant is back on the show today. He is doing technical sales for Admiral Maltings and has worked as a brewer in several local breweries. Famous for creating the Brut IPA style of beer, he was the featured guest on Brew Ha Ha once before, on this episode in 2018, when Mark Carpenter was co-hosting the show.

On September 19, Admiral Maltings is putting on a promotion called “It’s the Malt!” which will feature beverages – beer and whiskey – made with malt from Admiral Maltings. Watch their website and socials for news and details.

Beer is made from grains which are dry and hard. Malting is the process that lets the seed start to germinate and break down the complex components. They stop the process soon after germination. Then, the malted grain becomes beer and whiskey. They use chillers to cool their floor, to keep the process slow and cool. “We don’t want to grow grass,” he says, and they are only modifying the grain.

Kim Sturdevant

Kim Sturdevant is famous in craft brewing circles for having created the Brut IPA style. He won a Gold Medal for it in 2015 at the Great American Beer Festival. Mark Carpenter was so impressed that he asked Herlinda specifically about who had made that beer. For Kim it was an honor to meet Mark and to be a guest on Brew Ha Ha back in 2018.

Admiral Maltings serves beer and whiskey that their many clients make with their malt. Some of the pre-Prohibition breweries in San Francisco had their own malting facilities attached to them. Historically, brewers would get their ingredients locally. At one point, New York grew more barley than any other state, and between 1860 and 1940, barley was California’s most important agricultural crop. We used to export barley to England. They thought our barley was sun-kissed. Ron has a 1901 English floor malting handbook that mentions sun-kissed California barley. 

“It’s The Malt” is their largest annual celebration of products that use Admiral Maltings' malt. There will be over 30 beers flowing. About 10 of those will be festbeers, or Festbier in German, which is malt-forward amber lager. Modern ones are like a hefty pale lager. In Munich, Germany, the main breweries each make their own special beer for Oktoberfest.

Fox Tale Fermentation Project in San José
Felipe and Wendy Bravo from Fox Tale Fermentation Project in San Jose join Herlinda Heras on Brew Ha Ha today. This is their first time on the show for them and for their dogs too. Herlinda met them at the Freshtival, when Sayre Pietrowski introduced her. They drove here all the way from San José. They will be at Suds Francisco on August 23, 2026, which the Bay Area Brewers Guild is putting on at Salesforce Park. So if you are still in time, tickets are available online, here. 
 
Wendy and Felipe are married and are also the co-owners of Fox Tale. Wendy is the chef and Felipe is the brewmaster. Felipe remembers starting as a home brewer 15 years ago. Their location has been on the Guy Fieri show Diners, Drive-Ins and Dives on Food Network and also on Check, Please! on KQED.
 
Felipe explains that Fox Tale is a business based on the exploration of all all things fermented. This includes foods and beverages. Vinegars, syrups and kombucha are just three examples. There are flavors and aromas to be created in foods as well as beverages. A lot of the food they serve is grown locally. Tale in the name represents a story, a narrative of the diverse food culture in the Bay Area.

From Holistic Nutrition to Fox Tale

Chef Wendy moved to California from Michigan at 18 and got a job in a vegan and craft beer bar. There, she learned about what made her feel healthy and she continued on the path of plant-based foods. She studied Holistic Nutrition at Bauman College and it was “absolutely life changing.” Then she worked in the kitchen at the book of face. She worked in massive kitchens and considered it R&D. “How do you make super foods for like 300 people, for lunch?” She had to produce a new menu every week, so that required her to come up with lots of ideas.

Felipe went to undergraduate and graduate school at Cal Poly San Luis Obispo, where he studied electrical engineering. Firestone Walker brewery was there so he began to like craft beer then. He wanted to make an aut0mated home brewing system for a Master’s thesis. His advisor asked if he had worked in a brewery. He decided to look into brewing to learn about that, and loved it and stayed with it. It was a tough decision but he progressed his career as a brewery. He started at Central Coast Brewery in San Luis Obispo. Later he worked at Devil’s Canyon in San Carlos and then ended up at Fort Point in San Francisco.

Experiences and Hospitality at Fox Tale

Wendy explains what the “Project” part of the Fox Tale Fermentation Project means to them. They come up with ideas that are sometimes new sometimes familiary. She likes to experiment with fruits, flowers, grains and herbs. They aren’t vegan themselves but they feel really good about serving all plant-based food.

Renee De Luca calls from Cleveland

Renee De Luca is our guest on Brew Ha Ha with Herlinda Heras, calling in from Cleveland, where Herlinda recently visited her. Here is Renee's article on Substack about Herlinda's visit to Cleveland. She was also on these two episodes along with Don Barkley, part one and part two in July of 2024. That was when the Museum of Sonoma County was launching its exhibit On Tap, about local brewing history, which was a big hit.

Renee De Luca is the daughter of Jack MacAuliffe, who was a pioneer in craft brewing. He was one of the founders, and the brewer, of New Albion. Renee has been on Brew Ha Ha three times before today. On this episode in July 31, 2025, she remembered her father after his passing that year. Herlinda and Renee talk about a lot of cool exhibits at the Rock and Roll Hall of Fame. There is a room where they have instruments that anyone can come and play. Some people come in and really jam. 

ProChiller Green

Herlinda begins by describing the ProChiller Green system, that uses only a small amount of Co2 instead of a larger amount of dangerous refrigerants. They are holding demonstrations at Hanabi Lager in Napa, the next one is August 20. Visit the ProChiller Green website for more information.

Both of the beers Herlinda will open today come from Cleveland. They are a Shandy from Market Garden Brewery and a Great Lakes Stout. Herlinda introduces her friend Renee De Luca, calling in from Cleveland.
Renee’s father was Jack MacAuliffe, who founded New Albion brewery. Her dad’s recipe was famous and led the way in showing people how good a well-made local beer could be.

Herlinda visited Cleveland recently, when Renee scored VIP tickets to the opening of the Wings exhibit at the Rock and Roll Hall of Fame. Renee's article on Substack tells about it. Market Garden Brewery is next to the Market Garden in Cleveland. Herlinda will have one of their partners, Sam McNulty, on the show soon.
 
Herlinda describes the lineup along the shore of Lake Eire, from the Cleveland Browns stadium, the Rock and Roll Hall of Fame, the Cleveland Clinic, and the Cleveland Guardians. The city has embraced the new name. It comes from the Guardians of Transportation the line the Hope Memorial Bridge. It is an entryway to the city and depicts neolithic gods holding various forms of transportation. When you cross the bridge there is the Guardians' stadium.

Old Caz Beer co-founder Bryan Rengel

Old Caz Beer co-founder Bryan Rengel is our guest with Herlinda Heras and Daedalus Howell on the Brew Ha Ha today. He has been on Brew Ha Ha before, most recently this episode in January of 2024.

Bryan explains that Old Caz was founded on what he calls the Free Craigslist Model of business development. They were able to build the whole brewery from equipment and furnishings that they got for free on Craigslist. They fixed all their own office furniture, and the whole taproom with a walk-in fridge, and more. It’s an ethos that he has never stopped applying to the business.

The Old Caz Cavalcade

When they opened their location in Somo Village, they conducted a trek to the new place that attracted 300 people for a 3.5 mile walk. Now for the new Petaluma location, they are organizing the Old Caz Cavalcade. This time walkers will leave on the trail then take the train down. Or, bicyclists will have a route that leads to the Smart Train Bike Path, which itself leads right to the Old Caz Backyard. You have a choice of routes.

Comet Corn owners Sherry and Jeff Soleski

Comet Corn owners Sherry and Jeff Soleski are back on Brew Ha Ha with Herlinda Heras, six years after their first time on the show. That was this episode on December 20, 2018, along with co-host (at the time) Mark Carpenter and Brian Hunt from Moonlight Brewing Co.

Comet Corn is well known around Sonoma County as it’s sold in all the breweries and taprooms as well as all the concerts. Jeff describes himself as the Summertime Santa with lots of popcorn to share.

Herlinda gives Jeff and Sherry credit for their resilience. They lost their home in the Glass fire and yet they are “walking sunshine” says Herlinda. The Hale-Bopp comet was in the sky in 1997. Jeff and Sherry were so impressed with that comet that it led to the name of their business.

Jeff is a builder, a carpenter and makes stained glass. He was musing on what his next chapter would be. They were out camping, and Hale-Bopp was in the sky. He was making popcorn, dressing it and giving it out. He wondered out loud what his next move would be and someone said, it’s the popcorn. It was hard to sell stained glass but he saw that people wanted snacks. Then he decided that if he was going to create something, is should be food.

Hippie Dust is the name of the flavor now, but Hippie Dust was what they used to call nutritional yeast. The name of the salt flavor is Celestial. The others are Bloody Mary, Coconut Curry and Maple Syrup. They get their corn and safflower oil from organic growers. Herlinda notices that it is perfectly popped, light and crispy. They make fresh popcorn daily. Sherry calls all of their suppliers the Popcorn Tribe because it is a big family.

SQUEAKYWHEEL Beverages

Theresa, Jesse and Johanna from Squeakywheel Beverages join Herlinda Heras in the studio today on the Brew Ha Ha. Theresa Scripps is a co-founder, Johanna Pino does communication strategy and social media for Squeakywheel and Jesse Giambrone is a co-founder and creative director. This is their first time on the show.

Squeakywheel Beverages are to be featured at the Petaluma Music Festival, which takes place two days after the live show. We talked about it on last week’s show, right here. Our guests have brought all three Squeakywheel cocktails, Squeakyrita, Squeakytiki and Squeakyspritz. Squeakytiki is a tropical fruit punch. Squeakyrita is Baja Lime with salt, and Squeakyspritz is “kind of like an Aperol spritz” flavor. They are wine cocktails and 6% Abv. People find that the flavor is surprisingly light and refreshing. 

Sqeakywheel at the Petaluma Music Festival

Herlinda will be at the Petaluma Music Festival, with a tasting tent featuring all kinds of refreshing beverages. Especially at these brew fests, when people are drinking a lot of beer, these drinks can really hit the spot. Also, they are gluten-free. They work with Paul Scotto, a winemaker from Lodi. Yet this is very different and not like wine at all. They start with a blend of a light white wine, unbaked, then they add some water to regulate the alcohol. All of the flavors are lightly effervescent, with a clean finish and no sugar aftertaste.

Petaluma Music Festival plus Hiveworks Mead

Cliff Eveland from the Petaluma Music Festival and Alex Mendoza from Hiveworks Mead join Herlinda and Daedalus on Brew Ha Ha. The Petaluma Music Festival

The Petaluma Music Festival is a fund raiser for music in schools. Cliff Eveland is also a band teacher. He organizes the concert with a lineup of great musicians. Find the list of artists right here at the Petaluma Music Festival website.

Herlinda will be organizing a Craft Beverage Tasting, to include brews other than beer, such as mead. Father’s Brewing will be there along with a full Tiki bar from Squeaky Little Beverages, another wine bar, and more. The booth will be decorated Tiki style. Lagunitas and Old Caz Beer are big sponsors too. Fathers Brewing was on Brew Ha Ha on this episode last February. Old Caz Beer has been featured many times as well, their last time was this episode, also last February.

Mead is one of the oldest forms of alcohol that people have made. Mead is made primarily from honey. There are different styles of mead. Some are thick and sweet. Hiveworks Mead style is light, dry and refreshing. The only ingredients are honey and water. It is lightly carbonated.

Grace Bros. and John Burton

John Burton worked as a bartender for many years in many of the finest establishments in and around Santa Rosa. He also ran the Burton’s Bartending School for 47 years.

There will be a beer can and bottle show, with lots of antiques and collectable memorabilia. Exhibitors are coming from all over the country. The Santa Rosa Veterans Memorial building has free parking and spacious facilities.  Admission is free and to be a vendor the fee is only $20.

Grace Bros. was in operation from 1897 to 1966. John Burton became friends with Virginia Grace more than thirty years ago. It was the largest local employer for a long time. They also had breweries in Los Angeles and Fresno, at their height.

Stumptown Russian River Beer & Rib Revival 2026

Mark Legree with the Stumptown Russian River Beer & Rib Revival joins Herlinda Heras and Daedalus Howell on Brew Ha Ha today. The event is a fund raiser for the Russian River Senior Center. Stumptown Brewery is located near the Russian River. The Russian River Beer and Rib Revival is a large event with many tents hosting beers, cider, mead and about twenty barbeque teams. Herlinda was in the competition for nine years.

The basics are, there are 30 plus breweries and 20 plus barbeque teams. There is a great music lineup too. They have barbeque oysters and sometimes pit barbeque. They allocate over two pounds of meat per person.

Herlinda’s team actually came in second one year for their wings. Some of the professional barbeque people are on the scene in the middle of the night before, getting ready.

Herlindas suggests not to wear white. They normally sell out every year and as of today’s show, June 25, tickets are going fast, so check it if you are interested. Get tickets at Eventbrite here.

The Gravenstein Apple Fair 2026

Carmen Snyder from the Gravenstein Apple Fair 2026 joins Herlinda Heras and Daedalus Howell on Brew Ha Ha. She has brought lots of goodies including an organic Gravenstein apple pie from Cameron at the Gentle Hearth. He is a local who uses his grandmother’s apple pie recipe. Gravenstein Apple Fair Attractions

Farm Trails organizes many promotions for local farmers. They hold an Apple Blossom Festival in March, then “Blossoms, Bees and Barn Babies” are seasonal tours where people can get out and meet farmers and producers on their own turf. “We want to be megaphones and cheerleaders to elevate our farmers and to promote them so that they can have greater economic viability.”  Clark Wolf will also be chairing a panel about women farmers. There is a pie contest too, and perhaps Herlinda will be a judge. They have adult and youth competitions. “It’s an old-fashioned fair with a modern ethos.”

The Fair is full of attractions. They have lots of arts and crafts and the music lineup is excellent. The event is August 8-9. Locals can take advantage of a deeply discounted ticket. If you buy your ticket from a local partner, the price is only $20.

The piglet races are hilarious. They put four piglets into four lanes with differently colored vests. They are released onto the track and run to the food at the finish line, but sometimes they take the long way around. The audience gets split up into groups to cheer for one racer. Rob Loverde, Beatles and Beer

Rob Loverde is back on Brew Ha Ha with Herlinda Heras and Daedalus Howell for another round of Beatles and Beer. The first Beatles and Beer show was this episode last April. Rob is an audio engineer and a Beatles expert.

Today is Paul McCartney’s 84th birthday. Herlinda made her original list of Beatles tunes and beers together with Rob, six years ago and he joins Herlinda today for the second Beatles and Beer show.

Rob is a mastering engineer for Mobile Fidelity, aka MoFi. That is the last phase of audio manipulation or editing. It is also the first step in production by producing a master recording for duplication into different media.

Today Rob and Herlinda will pair beers with Beatles and Wings songs. Herlinda and Rob have seen him perform in concert. When I’m 64 was the first song recorded for Sgt. Pepper. Meanwhile, the Scots are drinking Boston dry during the World Cup.

Since 1966 Paul has owned a farm in Scotland, where he lived with his wife Linda. The Wings song Mull of Kintyre was for a while the highest selling single in UK history, (since then only three songs have sold more). The song is unknown to American audiences, where it was released to modest sales and was soon forgotten. That’s understandable, since the song has a strong Scottish character that appealed to UK audiences. US audiences did not pick up on any of that local joy. They toast to Paul with a Scotch Ale.

Paul practices yoga and according to Herlinda, “…still stands on his head every day.” In April of 1973 Pablo Picasso passed away. Paul and Linda were visiting Dustin Hoffman then, talking about their craft. They discussed Picasso and his last words, “Drink to me, drink to my health. You know I can’t drink anymore.” Paul started strumming the guitar and started writing the song Picasso’s Last Words at Dustin’s suggestion.

Herlinda brought a Paulaner Pils, a Bavarian style pilsner beer. The Beatles connection to Germany dates back to when they went to Hamburg, to play steady gigs. They met Klaus Voorman who was an art director and artist. He drew the cover of Revolver. Also, he later became the bass player of the Plastic Ono Band. The Liverpool Beatles Museum that Pete Best and his brother Roag own, has an exhibition of Stu Sutcliffe’s art, through this September.

He heard a song from Wings called Old Siam Sir, from the last Wings album. So, Herlinda opens a Chang lager from Thailand. Unfortunately it has been in storage too long. Lagers do expire, especially in green glass. Also, to celebrate Apple Records, Herlinda has brought a cider called WildCide. The Beatles’ last public concert was in San Francisco in 1966. In honor of that location she has an Anchor Steam Beer. Herlinda believes it is possible that the Beatles drank that beer while they were in San Francisco.

ProChiller PROGreen along with Hanabi Lager

Jim Vander Giessen with Prochiller PROGreen and Nick Gislason from Hanabi Lager join us on Brew Ha Ha with Herlinda Heras and Daedalus Howell. Nick has been on the show before, the last time was this episode last January. Jim Vander Giessen is a co-founder and CEO of Prochiller. He is in California for the ProGreen50 Showcase in Napa. Jim Weatherwax from ProChiller is also in the studio today. 

ProChiller manufactures a wide range of refrigerant systems. They have a new product line called PROGreen Solutions which uses refrigerants that have a negligible global warming potential.

Herlinda discovered this company at the Craft Brewers Conference in Philadelphia. ProChiller was showing their PROGreen systems at the conference. Herlinda was there with a friend who introduced her to them.

They mentioned that they were coming to California soon to present their products in Napa and they have just arrived.

ProChiller and Hanabi Lager

Nick Gislason is the owner of Hanabi Lager. He is also a professional winemaker and he knows the ProChiller company from using their systems in the winery. Refrigeration is important to both industries. Nick is doing a six-month experiment with a ProChiller system.

In brewing or winemaking, you need chilling for different steps in the process and up to the finished goods. In both cases, there is fermentation which produces heat. If you let the fermentation run away, it ruins the product. You have to pull the heat out and move it from the tank to a radiator outside.

The ProChiller PROGreen system is a CO2 based chiller that does not use traditional chemical refrigerants. Those chemicals have a high global warming potential if they are ever accidentally released. But the CO2 has a negligible index, about 1, compared too 500 or more. Nick explains his reasons for chosing to work with this new system. CO2 chillers actually produce boiling water as a “waste product” which is very useful around the brewery. ProChiller will be demonstrating the PROGreen chiller on Thursday, June 11, at Hanabi Lager in Napa. Soon they will hold other demos in the Sonoma County area.

Jeremy Marshall with Lagunitas Trooper West Coast IPA

Jeremy Marshall from Lagunitas has brought their Trooper West Coast IPA to Brew Ha Ha with Herlinda Heras and Daedalus Howell. Jeremy was on Brew Ha Ha on this episode of November 22, 2018.

Lagunitas is putting on an air guitar contest to celebrate the release of their Trooper West Coast IPA. Jeremy will pour from a growler of the Trooper West Coast IPA, drawn straight from the tank.

The  air guitar championship is set for 6/6/26. That’s Saturday, June 6, 2026, the same day as the beer release. Herlinda will be one of the judges. It’s a collaboration with Iron Maiden lead singer Bruce Dickerson. He is a beer guy, an entrepreneur, and a motivational speaker too.

A US Partner for Trooper Ale

Robinsons Brewery in England was the first to give the name Trooper to their signature premium ale. There is also a Brazilian Trooper ale. So when Iron Maiden was searching for a US partner, Bruce’s son’s wife told Bruce that Lagunitas was the perfect fit. Eventually Jeremy went to meet them backstage after a concert. He brought a cooler full of samples to share with a who’s who of metal bands. He found that Bruce was quite articulate about what flavors he liked.

The Lagunitas Trooper West Coast IPA uses a new hop called Krush. Jeremy likes its flavor profile. He tastes “weed, passion fruit, guava…”  It was HBC586 in development and now it's Krush. Watch out for a 100% Krush Beer for the radio station The Krush KRSH 95.9!

Jeremy confirms that Heineken is letting Lagunitas be Lagunitas. Heineken is the only worldwide beer company that is still majority owned by the family.

Jeremy went to UC Davis and studied brewing science. Michael Lewis and Charlie Bamforth were his teachers. They taught English ale styles, whereas Seibel in Germany is where to learn about lager beers. Lagers are a colder, longer stored style, like Coors Banquet or Budweiser. He describes the students at Davis as Beards versus Vests. Wine guys wore vests and beer guys had beards.

Lager and Ale

Compared to Lager, Ale is a little fruitier, and louder. If you hop it even more, you get to IPA. They are produced quicker and are more expressive and more popular in America. Wisconsin’s German-American community drove that city’s brewing history, so they made more German Lager styles.

After UC Davis, Jeremy’s first beer gig was Lagunitas. Tony asked where else he sent the letter. He wrote to all the breweries that made the beer he drank at Davis. Most were Ales, like Arrogant Bastard from Stone.

Jeremy has seen it all at Lagunitas. He knows that in the future, the successful breweries will have great focus and discipline. Other than Lagunitas, Russian River Brewing Co. is an example of that.

8-Ball Tavern’s Three New Owners

The 8-Ball Tavern‘s new owners Julie, Jen and Audrey, join Herlinda Heras and Daedalus Howell on Brew Ha Ha today. This is their first time on the show.

They have taken over the 8-Ball, which has been through quite a few incarnations. Julie has been running it for the last 8 years. Cotati is a college town, SSU is nearby. Herlinda has known the bar since university days, and has known Julie for a while too.

Yesterday we celebrated the 55th anniversary of the 1971 California Supreme Court decision that finally allowed women to bartend. Before that, the only women who could bartend legally in California were those whose male family members owned the bar, or those who owned the bar’s license themselves. There were various reasons given for the prohibition, which included some chauvinistic attitudes. Herlinda describes the legal twist. When a bar owner petitioned to open a topless bar, the judgement struck down the previous law as discriminatory. Because of this decision, the state had to allow women bartenders.

Griffo Espresso Martinis

There is a new vibe and new umbrellas, and it’s a lot cleaner than it was, but without significant changes to the dive bar look. “We just want to make a happy place for people to come and vibe and just be themselves.” There are food trucks that come. Mondays and Tuesdays there are great tacos. Sunday is Fun Day, with all kinds of games.

They are open from 7am to 2am every day. They are at 8 Charles Street in Cotati.

Some of the old bartenders from back in the day are back, such as Jim and Cassie. This has brought some of the old patrons back too. They have restored the place and positioned it for the future to provide a safe place for people in the community to meet. There is a new coffee machine and they still have three pool tables with a pool league on Friday nights starting June 21.

Customer Safety is Paramount

The 8-Ball Tavern new owners are committed to making it a safe place for women. There are plenty of security guards and the bar staff are trained to look for signs of bad behavior.

They have HenHouse Hazy, Old Caz One-Way IPA, PVA on tap, many beers from Morris distributing, like Bear Republic Racer 5 and Farmer’s Light. There are also have lots of bottles of beers from outside the area. They have seven or eight taps, which are the fresher, local beers. Every Bloody Mary is made by hand and every bartender has a style.

Russian River Brewing News with Natalie Cilurzo

Natalie Cilurzo joins Herlinda Heras and Daedalus Howell on Brew Ha Ha, to tell us about Russian River Brewing News and upcoming events. Her last time on the show was with Pliny the Younger  back on March 18.

Natalie has brought three beers to taste, including Vinnie Cilurzo’s first signature beer, Blind Pig.

Herlinda and Natalie were at the Craft Beer Convention in Philadelphia a couple of weeks ago. The industry is contracting. Schlitz beer is closing, in Milwaukee. They have been there for 120 years. Somebody might acquire that brand.

Unreasonable Hospitality

One of the speakers they heard was Will Guidara. He talked about his book called Unreasonable Hospitality. Natalie is a fan and describes his advice for companies and people in any industry related to hospitality. He used to own 11 Madison Park, a Michelin 3-star restaurant. His approach is to do things for guests that are unexpected.

For example, he sent his staff outside to get a hot dog from a street vendor, so he could serve it to his guests at his Michelin restaurant. He overheard their wish and did this to surprise them.

That made Natalie and Vinnie think a lot about the experience that people get from their annual Pliny the Younger release. Natalie remembers a young family there last year and the mom was pregnant, so Natalie gave her a RRBC onesie. The next year, they were back with the baby, wearing the onesie. The little details and personal touches are what make a customer’s experience special memorable. “It’s not just the beer, it’s the experience,” says Herlinda.

The first beer they taste today is called Stivo. It’s a Keller Pils that they have made in collaboration with Firestone Walker for about 20 years, although this is the first year that RRBC is actually producing it. It has a dry hoppy flavor, but not like an IPA, what they call German hoppy, not as strong.

A Really Fun Busy Summer at Russian River Brewing

Natalie grew up around cars and racing, and when they built the location in Windor with a big parking lot, she thought it would be a great place for a car show. So, they are doing that and there are 4 of them on the calendar this summer. One of the cars on display is an original Volkswagen van, owned by the third generation of the family. There will be lots of cars, a chopper sometimes shows up, a fire engine and an old Highway Patrol car too.

The NHRA top fuel drag races are coming to Sonoma Raceway and they will display the cars on Wednesday, July 15, before the race, Anton Brown’s top fuel dragster will be on display.

Ethic Cider founder Ned Lawton

Ned Lawton, Ethic Cider founder, is our guest on Brew Ha Ha with Herlinda Heras and Daedalus Howell. Ned Lawton came straight from the farm. That’s the farm in your glass, says Herlinda. The aroma rises from a wine glass. Ned was on BHH last year on May 15, 2025, almost exactly one year ago to the day.

Anything that is fermented fruit, like wine or cider, is made, and taxed, like wine. Ethic has a cider made from Arkansas Black apples. It is a late harvest apple and a slow ferment. In terms of wine talk, these apples are about 20 Brix, where apples are usually around 14 or 15 Brix. Cider makers can choose from different varietals, and they can also flavor it in many ways, such as adding fruit or using bourbon barrels. Ned says that’s where they bring fun to the game.

Ethic Cider has a 3.5 acre apple orchard, with about 20 varietals. They have some Gravenstein and Goldan Delicious and Johnathans. They use those as a basis and build on top of that, getting apples from other growers as well.

Blending Cider: balancing tart, sweet and bitter.

Blending cider is a balance between tart, sweet and bitter. They can also add sugars. Ned says they also use natural yeast. The majority of the small makers do natural fermentation. They like to let the ciders start naturally, then finish with some white wine yeast. They do it carefully, but it is to make the flavors more predictably uniform.

This middle path between wine and beer is Ned’s own way. He says cider people can be iconoclasts, a bit against the grain. He came from tech, did twenty years of that, then bought a farm in Occidental. He found that there was a lot to be done there, refurbishing the land.

It was already apple country. He had a lot to learn about agriculture and refurbishing the land they are on.

Ned sees that cider is growing. Since there is a known decline in wine and beer, people are discovering the option of cider. Everyone is asking what the consumer wants. Some of it is non-alcoholic. Ned thinks the growth in cider will also be driven by local production and brands.

Ethic Cider Events

Ethic Cider has events coming soon. The Summer Celebration Kick-Off is on May 30 from Noon to 5pm, at the Ethic Cider orchard in Sebastopol. Music, cider, barbeque and fun, no reservation required. Cider pairs well with BBQ! Also, they will also start doing Cider Salon on the second Thursday of the month, from 5-8 PM. The first Cider Salon is June 11, and they run through October.

They taste a Newtown Pipin, which grows in the back of the orchard. Later they taste an Eau di Vie which is a brandy. They distill it from apples. It is clear and has no wood and no wood influences. It is really a spirit. So they add things to it. It can go into a spritz, with a cherry and some ice. Eau de vie can support a really nice cocktail.

They also make a tonic water, which came from the need to have an N.A. option. They didn’t want to make a fermented cider and then de-alcoholize it, so they use apple cider vinegar mother to flavor it. With ethic tonic and apple cider vinegar, you can make a “shrub.” Herlinda points out that any menu or event should have at least one really good non-alcoholic option. This is to make sure that there is something for everybody. The problem has been sugars, and finding NA beverages that are not so high in sugar.

Marin Irish Festival 2026

Drew and Kevin Patterson from the Marin Irish Festival 2026 join Herlinda Heras and Daedalus Howell on Brew Ha Ha. Drew also came on Brew Ha Ha last year on April 24, 2025, to promote last year’s event. 

This year the festival has grown to cover two days, Saturday and Sunday May 16 and 17. Herlinda remembers attending the first Marin Irish Festival last year. Kevin’s parents started the Renaissance Pleasure Faire in the ‘70s. They also produce the Dickens Christmas Faire at the Cow Palace in December.

They have everything Irish; food and drink, music, sheep dogs and a sanctioned Irish dance competition, called a feis, pronounced “fesh.” Theirs is maybe the biggest feis on the west coast. They have some Guinness, Smithwick and Tullamore whiskey,

There are two Irish pubs. One is called the Bearded Goose, and the other is called The Gander. They sell all the Irish brews they can bring in. Drew says live music is what makes an Irish pub live. You can actually bring your instruments and play along.

Lagoon Park Comes to Life

Lagoon Park is in the Marin County fairgrounds. The park comes to life with 6 stages. There will be demonstrations of falconry. One falconer has worked with them for more than 30 years. They will actually fly the birds from the main stage. There is also a pen for a small flock of sheep, where they demonstrate how sheep dogs work with the sheep.

The festival began when some friends of Kevin’s were organizing a feis, but they had nothing happening around it. They developed the festival around the feis.

Smithwick’s is a red ale and they are proud that they have it on draft. The Guinness is also on draft. Every glass of Guinness takes a two-minute pour.

Tickets are $30 which Herlinda says is reasonable enough to allow someone to also do some shopping. There is a selection of craft vendors, makers of candles, glass blowing, kilts and more. There is a traditional meat pie booth. Hop Monk puts a special menu together. They also have kebobs and Greek food. The Tully Pickleback is a shot of pickle juice with a shot of Tullamore Dew whiskey. Hair of the dog? Pre-emptive hair of the dog?

For example, Hop Monk makes Irish tacos, with corned beef and cabbage on a tortilla.

Herlinda Back from Philly and the Giro Vigneti

Jim Morris of Healdsburg Rotary and Randy Johnson of Getaway Ventures join Herlinda and Daedalus on Brew Ha Ha to talk about the Giro Vigneti bicycle ride. Also, Herlinda is back from a trip to Philadelphia where she attended the Craft Brewers Conference and the World Beer Cup. She has a lot to tell about Philadelphia and naturally she has also brought some beers back to taste and share.

Later in the show, Jim Morris from Healdsburg Sunrise Rotary and Randy Johnson from Getaway Ventures join us to talk about the Giro Vigneti bicycle ride.

This year Philly will be a big part of the nation’s 250th or sesquicentennial celebrations. Herlinda’s last visit there was in 2020 during the pandemic and the Glass fire at home, when she escaped to Tara’s in Camden. During Covid they only let 6 or 12 people at a time into the Declaration of Independence. This time, there were school groups coming through. Philadelphia was our first national capital city and one of the cities at the heart of the American Revolution.

The first beer Herlinda opens is a collaboration brew from the Craft Brewers Association and several other breweries. The members of the Craft Brewers Association are small independent family-owned businesses, not large corporate operations. This beer is a lager, 5.7% ABV and he label says, “Of the brewers, by the brewers, for the brewers…”

Several Bay Area breweries won medals at the World Beer Cup:

  • Russian River Brewing Co. won a bronze medal for Velvet Glow.
  • Morgan Territory Brewing in Tracy did very well.
  • Fieldwork Brewing, which just came into Santa Rosa, won several golds.
  • Danville Brewing Company, Hot Dogma and Alvarado Street Brewery won medals.
  • Otherwise Brewing in San Francisco swept the gluten-free category.
  • Sonoma Springs Brewing in Sonoma County and Cooperage Brewing in Santa Rosa also won medals.

They begin the second portion of today’s show by tasting the second beer, called A Smile with Every Sip, from Troëgs. Jim Morris from Healdsburg Sunrise Rotary and Randy Johnson from Getaway Ventures join Herlinda and Daedalus. They are here to describe the Giro Vigneti bicycle ride. It is a bicycle ride and race, one of the more beloved ones out there. It has a culinary tilt to it that no other ride has. There are three different routes, The Healdsburg Century, a Metric Century and an intermedio. There are well over 100 riders. The itineraries start and end in Healdsburg and go around the hills and the valley, with rest stops.

The Giro Vigneti is a fund raiser. The grand prize is dinner for two at fifteen different restaurants in Healdsburg, including some pretty big names. The raffle tickets are $25 each or 5 for $100. All of the Rotarians are out selling raffle tickets. This is their single biggest fund raiser. To register to ride, go to the Giro Vigneti website.
